This is a healthy version of a meatball sandwich that doesn’t skimp on flavor! It’s super easy and a little bit fun to make!
Things you need:
Ground turkey(buy the Italian seasoned ground turkey; it’s already seasoned to deliciousness and you don’t have to spend a fortune on spices)
One medium bowl
One cookie sheet
1/3 cup breadcrumbs or panko breadcrumbs(use stale bread; place it in a food processor, but don’t blend too much, just enough to make crumbs)
1/2 tsp of salt
1 tblspn red pepper flakes(optional)
1 tsp Onion powder
Your favorite tomato sauce
Two 6-inch sandwich rolls
Provolone cheese(I used Sargento’s reduced-fat cheese)
Preheat the oven to 425F.
Put all of your ingredients into a medium bowl; turkey, one egg, breadcrumbs, salt, onion powder, red pepper flakes(optional).
Before you mix all ingredients together, have the cookie sheet right next to your bowl because you will be rolling the meatballs after the ingredients are mixed.
Place all of the ingredients into your medium bowl, and with clean hands, get in there and mix, mix, mix.
If the turkey just came out of the fridge, it will be really cold to handle. Keep a bowl of warm water next to you to dip hands intermittently if necessary.
After all ingredients are mixed well, roll turkey into 2-inch balls.
Once all of the turkey is rolled and placed on the pan, put the pan into the oven on the middle rack. They will stay in the oven for 10 minutes at 425F. The last 10 minutes the meatballs will go into the broiler. This is the very bottom drawer in your oven. The broiler is extremely hot, so be careful. This will expose the meatballs to high heat cooking the meatballs thoroughly and also it will give the meatballs a nice all-around color.
Note: If the meatballs look anything like this…
…you cooked them waaaaaaaay too long!
While the meatballs are in the broiler, start heating up the tomato sauce in a pan. Use whatever sauce is your favorite. I used a Prego sauce with sausage and garlic. It was really good. I would recommend this.
Each sandwich can fit two and a half to three meatballs depending on how they are cut.
Ladle the hot tomato sauce over the meatballs and place provolone cheese on top.
