Everything’s Betta’ with Feta!

Thanks to my husband for such a brilliant title! He came up with this while he was leaning over my shoulder watching me prepare this light snack for us.

I guess you could call this snack bruschetta but the only difference is it has feta cheese on top. I used to eat something very similar to this in Pasadena at a cafe right next to Vroman’s Bookstore. The way it was made was more like a sandwich served with a side of spicy mustard. My version is more of an open-faced sandwich. This is great served as an appetizer for a party or for just a little quick snack.

Here are the items needed:

Small slices of sourdough bread
Two Roma tomatoes
Feta cheese crumbles
Olive oil
Salt and pepper

Dice up the Roma tomatoes, and place them in a small dish. Add some olive oil to the tomatoes. Add however much olive oil you’d like, but don’t drench the tomatoes. I added about 1/2 tblspn, then sprinkle in some salt and pepper and mix…

Now, roll some washed basil leaves, and chop thin slices…

Add the basil to the tomatoes and mix…

Set the tomatoes with basil aside.

Next step we will slice the sourdough.

After you have your slices, drizzle some olive oil on top…

Scoop a generous amount of tomatoes with basil on top of the sourdough bread. Sprinkle some feta cheese on top of the tomatoes…

Toast these in your toaster oven for five minutes.
