Blueberries were just chilling out in the fridge with nothing special happening with its blue self, so I decided to do something about this situation. With the world at my fingertips, I Googled “Recipes for blueberries.” Ah-ha, blueberry loaf. Berries, your destiny is nigh. So that settles it, blueberry loaf it is.
This recipe I found at AllRecipes.com. It’s a simple recipe to follow, and it only took 10 minutes to prep. One thing I recommend changing for next time is the amount of blueberries. The recipe calls for 1 1/2 cups of berries. I recommend 3/4 cup of berries instead. Too many berries, not enough cake, but either way, it still turned out yummy!
Items needed:
3/4 cup of washed blueberries
1 1/2 cups of flour
3/4 cup of sugar
1/4 cup of oil
2 tsp of baking powder
1/8 tsp of salt
1/2 cup of milk
1 egg
1/2 tsp of vanilla extract
Preheat the oven to 350F
Start with the wet ingredients first. In a large bowl, add the oil, milk, vanilla extract and egg… Mix the wet ingredients well…
In a separate bowl, add all of the dry ingredients; flour, salt, baking powder and sugar. Mix the dry ingredients together…
Pour 1/2 of the dry ingredients into the bowl with the wet ingredients, mix well, and then add the rest of the dry ingredients to the batter, mix…
Once the batter is mixed well, fold in the blueberries…
Pour the batter into a greased loaf pan…
Bake for 45 to 50 minutes. After 45 minutes, do a quick toothpick test…
Poke the toothpick into the loaf. If there is no batter or cake on the toothpick, it’s ready. Let it cool for a good 20 to 30 minutes. I let it cool for 10 minutes before removing it from the pan, and then placed the loaf on to a cooling rack…
