Carrot Cake Cookies

Here is a yummy fall cookie recipe. Carrot Cake Cookies. I love, love, love carrot cake! The sweet cream cheese frosting, spice cake, carrots, nuff said. Oh, and I especially love the wonderful aroma that fills the kitchen when baking it. What a perfect way to kickstart the fall season.

Items needed:

Box of carrot cake mix
Cream cheese frosting
Two eggs
Half a cup of melted butter
Two tblspns of vegetable oil
Parchment paper
Cookie sheet
Large bowl

Preheat the oven to 350F

In a large bowl mix the cake mix with two eggs, melted butter and oil…

You can use a handmixer or Kitchen-aid mixer. I used a heavy-duty mixing spoon, and it worked just fine…

After mixed, the cookie/cake mix should have a doughy consistency. Use a cookie scoop if you have one to make even-sized cookies. I have a cookie scoop that makes one-inch rounds. Place the dough on a cookie sheet lined with parchment paper…

Bake the cookies for ten minutes. After the cookies are done baking, place the cookies onto a cooling rack.

Let the cookies cool for 15 to 20 minutes, then frost with cream cheese frosting…

These cookies turned out so moist and delicious and were quick and easy to make. A nice shortcut for that carrot cake craving.
