French toast is one of my favorite breakfast foods. For this recipe I used sourdough English muffins, it’s really just what I happened to have in the pantry, and it turned out pretty good.
For this recipe I made a sweet lime whipped cream to top the French toast. I added some strawberry slices to the French toast and then dusted it with powdered sugar. I ate this just as it was with no syrup. You can add syrup to give it some extra sweetness or add extra powdered sugar.
Six English muffin halves
2 tblspns of milk
Heavy whipping cream
2 tblspns of lime juice
4 tblspns of powdered sugar (extra for dusting)
2 tblspns of butter
Two medium-sized bowls
Start by prepping the toppings for the French toast, which is the lime whipped cream and sliced strawberries.
Slice however many strawberries that you plan to use…
Place the sliced strawberries into a small bowl and place into the fridge.
Juice one lime or two, depending on the lime size, to have a total of 2 tblspns of lime juice…
In a medium bowl add the 2 tblspns of lime juice and 4 tblspns of powdered sugar and mix well.
Then once the sugar and juice are combined, add a cup of heavy whipping cream. Blend well with the handmixer until the cream has thickened…
Once this is done, place the whipped cream into the fridge.
Now for the French toast. In a medium bowl crack two eggs and add the 2 tblspns of milk.
Soak two halves of the muffins in the egg mixture…
Let the bread soak for a good minute. Since we’re using sourdough, they can soak for quite a while without getting soggy. While the bread soaks, heat the pan and add 2 tblspns of butter.
Once the butter has fully melted and the pan is nice and hot, place the muffins into the pan.
Flip after a minute to a minute and a half…
Cook the other side for another minute to minute and a half. Make sure these are cooked thoroughly. Raw egg is not a pleasant taste.
Once the French toast is done, place two to three slices on a plate, dust with powdered sugar, sprinkle on some strawberries and scoop some lime whipped cream on top, and we have ourselves some English Muffin French Toast!

There’s always Welsh rarebit, which I’ve never had. Come to think of it I’ve only ever had French toast once – and that was quite enough (I can’t tolerate fried bread).

I have never heard of Welsh rarebit before. I had to Google it, and it sounds delicious, and I am huge fan of cheese, too. I bet it would taste great with some asparagus or broccoli. Thanks for sharing. I may have to try this out 🙂

Looks delicious, but can you really call it “French” toast while using “English” muffins? My husband says you should call it “British Toast” (grin)
Oh, it was delicious. Lol, I like that, “British” toast. I’ve never heard that before. The whipped cream turned out really good btw, I would probably use the lime whipped cream for a key lime pie.
