Blueberry Loaf

Blueberries were just chilling out in the fridge with nothing special happening with its blue self, so I decided to do something about this situation. With the world at my fingertips, I Googled “Recipes for blueberries.” Ah-ha, blueberry loaf. Berries, your destiny is nigh. So that settles it, blueberry loaf it is.

This recipe I found at AllRecipes.com. It’s a simple recipe to follow, and it only took 10 minutes to prep. One thing I recommend changing for next time is the amount of blueberries. The recipe calls for 1 1/2 cups of berries. I recommend 3/4 cup of berries instead. Too many berries, not enough cake, but either way, it still turned out yummy!

Items needed:
3/4 cup of washed blueberries
1 1/2 cups of flour
3/4 cup of sugar
1/4 cup of oil
2 tsp of baking powder
1/8 tsp of salt
1/2 cup of milk
1 egg
1/2 tsp of vanilla extract

Preheat the oven to 350F

Start with the wet ingredients first. In a large bowl, add the oil, milk, vanilla extract and egg… image Mix the wet ingredients well… image In a separate bowl, add all of the dry ingredients; flour, salt, baking powder and sugar. Mix the dry ingredients together… image Pour 1/2 of the dry ingredients into the bowl with the wet ingredients, mix well, and then add the rest of the dry ingredients to the batter, mix… image Once the batter is mixed well, fold in the blueberries… image Pour the batter into a greased loaf pan… image Bake for 45 to 50 minutes. After 45 minutes, do a quick toothpick test… image Poke the toothpick into the loaf. If there is no batter or cake on the toothpick, it’s ready. Let it cool for a good 20 to 30 minutes. I let it cool for 10 minutes before removing it from the pan, and then placed the loaf on to a cooling rack… image

    • Hi Mike! Welcome back 🙂 Absolutely blackberries will work perfectly with this recipe. One interesting thing I learned from my dear sisters is that I should have lightly dusted the berries with some flour before adding to the batter to keep the berries from sinking to the bottom. Now, I haven’t tried this technique yet, just found out about it. Once I give this a try, I’ll revise my blog. I hope the blackberries work out. I’m guessing 102% that it will 🙂

    • Thank you! It did turn out pretty tasty, so I’m thinking it was a success 🙂 Maybe I’ll keep the original amount of berries instead of the half that I suggested. Will have to experiment some more.

  3. Your loaf looks perfect! And nicely risen as well. I still don’t have measuring cups but I now have a good and quick conversion site that I’ve used recently. Must bookmark this and try and figure out the ingredients in grammes. That way I should be able to make half – otherwise I’ve going to be the size of a detached home!

You can tell I didn’t give it enough cooling time, though, cuz it’s got some cracking happening on top. I have some left over, and since it’s cooled for some time, it slices perfectly.
