Quiche with Veggies

Here is a great recipe for a delicious, super easy quiche. What I love about a quiche is that you can add whatever meats and cheeses and vegetables you’d like. Have fun and be creative with it! Below is a recipe for a veggie and cheese quiche.

Things you’ll need:

Pie dish (I used a 7-inch pie dish; if you use a 9-inch dish, which is the typical pie dish size, add two extra eggs)
Pie crust
1/2 cup shredded cheddar cheese
1/4 cup of milk
4 eggs
1/4 tsp of salt
1/4 tsp of pepper
One bell pepper
Two Roma tomatoes
Scallions (Diced thinly; be sure to cut off the tough dark green end)

Preheat the oven to 425F

Lightly spray pie dish with a nonstick spray.

Place the pre-made pie dough over your pie dish, and then with a rolling pin, roll over the top of the pie dish to remove the excess dough…

No need to poke holes into the dough. This is only done if you pre-bake the pie dough.

Dice up your washed veggies – tomatoes, scallions, bell pepper – and set aside…

In a small bowl scramble the eggs, add salt, ground pepper, milk and the veggies but hold the bell peppers for last. This will be placed on top of the quiche for decoration.

Sprinkle the 1/2 cup of shredded cheese on top of the pie crust, and then pour the egg mixture on top of the cheese..

Sprinkle a little cheese on top of the egg mixture, and place your bell pepper slices however you’d like. I made little flower shapes…

Bake the quiche for 22 minutes. After 22 minutes if the middle looks a little runny, add more time.
