Chicken Caesar Wrap

This is a great recipe for a Chicken Caesar Wrap. I added some cooked green bell pepper and diced tomatoes. These wraps turned out really tasty, and it’s perfect for a light lunch. I like to post quick meals, but for this recipe, I had to cook the chicken breast which took about 18 minutes to boil and then 5 minutes to shred after it cooled, but now I have enough shredded chicken to make four separate meals for two people, I’m not complaining, so worth the extra cooking time. Stay tuned for some more shredded chicken recipes I’ll be posting in the coming weeks!

For our Caesar wraps, we’ll need:

Chopped Romaine lettuce
Sandwich wraps
1&1/2 cups of shredded chicken
1/3 cup of Caesar dressing(add more dressing if needed)
1 tblspn of fresh squeezed lemon juice
A pinch of salt
One green bell pepper sliced into strips
One Roma tomato
Large mixing bowl

For the sandwich wraps I used Lavash brand. You can even use a flour tortilla for the wrap if you can’t find it in your grocery store, but more likely than not, it will be where either the bread is or the tortillas are.

In a heated and greased pan, canola spray works great, add your green bell pepper strips…

These will cook for about five minutes on a medium heat or until al dente for a bell pepper. Just give these a toss every minute. After these peppers are cooked, turn off the stove, and add a little salt to them. These can be set aside while we work on the salad.

In a large bowl add the Caesar dressing, lemon juice and a small pinch of salt…

Pour in the two cups of shredded chicken, and mix until all of the chicken is coated with dressing…

Then add a handful of chopped Romaine lettuce, mix the lettuce and chicken together…

Dice up some tomatoes that will be added at the end…

I find that it’s easier to roll the sandwich wraps after they’ve been warmed, so heat them in the microwave for 20 seconds.

After the wraps are heated, place them on a flat surface. Add the chicken and lettuce Caesar mix in the middle of the wrap, add some bell pepper strips, tomatoes and a little sprinkle of salt…

Roll it on up, and we have ourselves a delicious Chicken Caesar Wrap!
